DAY#137 - Phase 3- DAY 1
Today is officially day one of Phase 3 of my diet. I am now allowed to eat fats, any meat, and most veggies, and a good bit of fruit. I just need to steer clear of Sugars & Starches. And my own added rule is NO to processed crap or chemicals. So pretty much no sugars/desserts/pasta/and sweet fruits. I plan on slowly adding foods and increasing my intake over the next week as to not put my body into shock.
Today was the first day I had eggs in months. I scrambled 3 in a pan and added a little bit of spice and some hot sauce. YUM, I like eggs. My wife made grilled veggie ratatouille last night and i snuck 1 piece of zucchini and it was delicious and I am planning on having the left overs today for lunch. w00t!
I also decided I am gonna try coconut flour and almond flour as a substitute for regular flour in my cooking and baking. It is an experiment to see what will happen and if I will like it. My guess is I will. I also bought a coconut flour recipe book so I am sure Shelly will enjoy looking through that. Both flours are ok for my phase 3, but I am hoping that I might use them for the rest of my life. Both are supposed to be higher in fiber & protein and lower in carbs and also are gluten free.
